
Sandwiches are not something I normally crave, but after having this Strawberry and Basil Panini at Cafe Jonah in Atlanta, I can’t get enough. These thick layers of toasted bread with sliced strawberries and goat cheese are delicious enough on their own, but add fig spread and basil leaves and you have a new brunch favorite. Enjoy!
Strawberry and Goat Cheese Panini
Ingredients:
- Loaf of unsliced bread
- 2 tablespoons butter, softened
- 1 pint strawberries, sliced
- 1 cup basil leaves
- 4 oz goat cheese
- 4 oz fig spread or jam
Directions:
- Slice the bread thickly and butter one side of each slice. Layer the goat cheese, fig spread, basil leaves, and strawberry slices on the bread and cover with another buttered slice.
- Grill in a panini press over medium heat until toasted. Or you can use a skillet and panini press or brick covered in foil.
