The everyday Garden Strawberry is a hybrid of two wild strawberries, and first bred in the mid 1700′s in France, after explorers brought back plants. It is one of the easiest plants to grow, happy in most gardening zones, in any container with access to full sun and great drainage. It’s known as a miracle berry, full of antioxidants, and is suspected of being anti-carcinogenic and anti-inflammatory. It can be used in a variety of recipes, in everything from pies to salads.
Recipes
My favorite way to eat strawberries is sliced and topped with whipped cream. The healthy version is to take a large can of coconut milk (skip the lite versions), refrigerate it overnight, and scoop the hard coconut off the top leaving the liquid in the can. Place in a large bowl and whip with a mixer for a few minutes until fluffy. Stir in vanilla bean paste and cinnamon to taste. You’ll never want the store-bought dairy version again!
