Simple Foods

We’ve been focusing on simple foods lately. Easy combinations with three or four ingredients, like blackened shrimp and flounder spaghetti or shrimp, asparagus and pesto pasta. I’ve enjoyed using frozen foods, as not much is in season. Something I missed having access to in Nicaragua. Our selection there consisted of chicken nuggets (20 different types), frozen chicken (that wouldn’t fit in our mini fridge or freezer) and french fries. Oh, and $13 a pint Haagan Daaz.

We make sure to grab a few fresh veggies each week. Usually one each of squash, zucchini and cucumber. Maybe a bunch of asparagus instead. I know they aren’t in season in Alabama, but Florida is close enough.

We’re following our natural cravings for lots of veggies. I think our bodies naturally push us to detox after the fatty holiday season. We’ve both dropped a few lbs by just watching our calorie intake and focusing on veggies and lean proteins.

How have your eating habits adjusted post holidays?

The Davises are detoxing this week too! No meats, wheat, or sweets (and Keith always like to add beets to the list too, even though it’s not true). It’s great to let your body feel like itself, pure and simple!

I’d love to say that we’re detoxing after the holidays too…. but it just isn’t true!!! Chris is doing better at eating more healthy, but it’s been me working at it with him for the past 4 years!
This time of year, I usually crave (and eat) a lot of hot soup/stew/gooey things. I crave hot, hearty, and rich things. Which isn’t really good for the ever expanding waistline. However, I am trying to make more healthy crock-pot fare and watch my portions.
The one thing I do crave that is healthy, this time of year, is citrus fruit!! I eat a grapefruit every morning for breakfast.

Citrus is in season! My father in law gave us several pounds of oranges and I’ve been eating two every day. So tasty. And it’s hard when you’re part of a couple. You have to fight to get on the same page with diet/finance/everything.
