Tomato soup and basil go together like a horse and carriage. It’s the perfect match, and this soup is the perfect match for those nights when you really don’t want to cook. And it’s cold. And you’re wearing your pajamas before the sun goes down. Enjoy!
Easy Tomato Soup
adapted from Food Network.
Ingredients:
- 2 (15-ounce) containers, chicken or vegetable stock/broth
- 1 (28-ounce) can concentrated crushed tomatoes
- 1 cup heavy cream (can substitute fat free half and half to make it much lower in fat)
- Coarse salt and black pepper
- 1 white onion (chopped)
- 2 cloves garlic (chopped)
- 20 leaves fresh basil, cut into strips, for garnish
- 2 or 3 small heirloom tomatoes, cut in half
Directions:
- In a medium saucepan, saute the chopped onion and garlic over moderate heat until onions are translucent.
- Add broth and tomatoes and raise heat until soup is simmering. Stir in the cream and reduce heat to low.
- Season with a little salt and pepper then simmer gently for 15 minutes.
- Puree soup with an immersion blender. Serve in bowls topped with basil leaves and heirloom tomatoes.
